Radishes with Anchovy Butter

Enjoy these fiery beauties as the French do – an elegantly simple hors d’oeuvre. Fresh radish’s dunked in softened butter & sea salt. Pimp your butter by adding chopped garlic and anchovy paste for a deliciously addictive twist. The only secret here is to use the best quality ingredient – fresh radish’s that are picked in season, the best quality butter you can find and sea salt – I recommend Maldons.

Enjoy fresh radish’s as the French do – an elegantly simple hors d’oeuvre. Fresh radish’s dunked in softened butter & sea salt is a delicious way to enjoy them in the height of their season.

Ingredients

  • Anchovy butter
  • 1 cup finest quality butter

  • 1 tsp anchovy paste or 2-3 anchovy fillets, mushed with the back of a knife

  • squeeze of fresh lemon

  • sea salt & pepper to season

  • Radish & Salt
  • 1 bunch french breakfast radishes, in season

  • sea salt, to dip

Directions

  • Mix the butter, anchovies, squeeze of lemon juice and seasoning in a bowl till thoroughly combined and softened. Transfer half into a dipping bowl for your radishes and the remains half in a tub. Refrigerate the tub of anchovy butter and use it to spread on toast or crackers.
  • Wash the radishes in cold water and assemble on a board with the bowl of anchovy butter and a small bowl of sea salt.
  • To eat, just smear a little of the butter on the end of a radish then sprinkle with the tiniest pinch of salt before popping into your mouth.
