This is a no-fuss granola bar recipe that I use regularly to make mountain trail snacks. They’re sweet, salty, thick and chewy – everything a granola bar should be. They’re my perfect mountain biking snack.

Sweet, salty, thick and chewy – everything a Granola bar should be.

Ingredients

  • Dry ingredients
  • 1 2/3 cup quick rolled oats

  • 1/2 cup granulated brown sugar

  • 1/3 cup oat flour

  • 1/2 tsp sea salt

  • 1/2 tsp allspice

  • 2 cups trail mix

  • 1 cup desiccated coconut

  • Wet ingredients
  • 6 tbsp melted butter

  • 1/4 cup honey

  • 2 tbsp maple syrup

  • 1 tbsp water

Directions

  • Preheat the oven to 180C degrees. Line a baking dish, I used a regular sized loaf tin to get deep, rectangular slices.
  • Mix together all the dry ingredients. In a separate bowl mix together the wet ingredients.
  • Tip the dry ingredients into the wet and give it a good stir. Spoon into your lined baking dish and pat down.
  • Bake for 30/40 minutes, until golden brown and slightly ever-so-slightly crispy looking around the edges.
  • Wait to cool before chopping into pieces…Try not to devour it all before actually going mountain biking.
