This is a no-fuss granola bar recipe that I use regularly to make mountain trail snacks. They’re sweet, salty, thick and chewy – everything a granola bar should be. They’re my perfect mountain biking snack.
Chewy Granola Bars (my mountain biking treats)

Ingredients
- Dry ingredients
1 2/3 cup quick rolled oats
1/2 cup granulated brown sugar
1/3 cup oat flour
1/2 tsp sea salt
1/2 tsp allspice
2 cups trail mix
1 cup desiccated coconut
- Wet ingredients
6 tbsp melted butter
1/4 cup honey
2 tbsp maple syrup
1 tbsp water
Directions
- Preheat the oven to 180C degrees. Line a baking dish, I used a regular sized loaf tin to get deep, rectangular slices.
- Mix together all the dry ingredients. In a separate bowl mix together the wet ingredients.
- Tip the dry ingredients into the wet and give it a good stir. Spoon into your lined baking dish and pat down.
- Bake for 30/40 minutes, until golden brown and slightly ever-so-slightly crispy looking around the edges.
- Wait to cool before chopping into pieces…Try not to devour it all before actually going mountain biking.
