A popular Jamaican snack, plantain chips are easy to make and the perfect bites to go alongside a tin of Ting. These are subtly spiced but you could keep it simple with sea salt or sweeten with cinnamon. Serve as a BBQ snack alongside Jerk Chicken instead of bowls of crisps.\

Flavour them with spices, keep them simple with sea salt or sweeten with cinnamon.

Ingredients

  • 4 green plantain, peeled and chopped into thin slices

  • coconut oil

  • 1 1/2 tsp sea salt

  • 1/4 tsp paprika

  • pinch cayenne pepper

Directions

  • Add coconut oil to a large saucepan. You want enough oil to submerge the plantain chips.
  • When the oil is hot, fry the plantain slices till golden, around 2 – 3 minutes. To avoid overcrowding the pan which will lower the temperature of the oil dramatically, do this in batches.
  • Remove with a slotted spoon and drain on kitchen paper. Season with salt and spices immediately whilst still hot.
